I Baked a Cake

For the first time in so many years, that I have forgotten exactly how many, I baked a cake today. I will be taking part in a bake off in a few weeks time and thought it would be a good idea to have a trial session. I stopped baking a lot since I left a job where my co-workers were always willing to eat the results. Ironically I myself don't go in much for eating sweet things as such sugary snacks are a definite migraine trigger.

The baking experiment started with a trip to the village to buy the ingredients which was a challenge in itself as the recipe is in Dutch and included a few things not available as such here so I improvised and hoped for the best. On the way home the red campion growing wild in the verges of our lane called to me to stop and take the picture that became my blip for the day.

Then it was time to peel and core about 10 apples and start baking. You can see the result above and it seemed to go down well with my audience of one. John wolfed down a slice and is already eying up the rest. I was hoping to freeze some slices but I don't think that's going to happen. Now I'm just keeping my fingers crossed that it will work out as well when I need to make it for the baking competition!

Looks delish! I "tried" to bake some cookies from scratch about a month ago and they didn't turn out well because I had forgotten that it's best to cream the sugar and eggs first, THEN add the dry ingredients. After 2 trays worth didn't turn out (the cookies looked like pools of dog vomit), I threw the rest of the batter into a square pan and just made bars. LOL.

You haven't baked in "so many years," yet you entered a baking contest... Makes perfect sense to me.
That cake looks scrumptious. I do hope you'll share the recipe cause I love a good apple cake.
